If this helps, Mexicans can use an exchange to cash out into fiat.
For example with Coinbase, cash out using a bank account, or with cash pickup -- e.g., at Oxxo, and I think even Walmart.

Other exchanges exist (e.g., Bit2Me), but I don't know the space or which ones are good or not.
You can use Remitly to send yourself a remittance in Mexico -- pick up at 7-eleven, Oxxo, etc. Remitly works for sending from the U.S., and 27 other countries. KYC required.

FWIW Mexico City at least has a few Bitcoin ATMs. Likely to be others around the country too.

So knowing that they can get pesos using their bitcoin might hellp in persuading them to accept your bitcoin.
Otherwise, the method to get yourself some pesos for spending using "remittance to yourself" could be an alternative for you.
Looks like Remitly is who Coinbase is using for "last-mile" delivery into Mexico. So you can probably do that "remittance to yourself with cash pickup" if you have a Coinbase account too. I think, but I'm not sure.
