Good on you and in developing your own entrepreneurial journey. How hard is for you then, finding people to work with and willing to pay in bitcoin?
Second, why you'd not pay your employers in bitcoin if is your unit of account? or isn't, and you're willing to change sats back to pay them in fiat?
The first thing we should keep in mind is that BTC adoption here in Latin America is very low... especially where I'm located (Peru)...
I also think that if I had an assistant, before paying them in Sats for their work, I should first teach them what this asset is and why it would be so beneficial for them as a worker to receive something so valuable today and something that will become much more valuable over time as a reward for their time.
I suppose the worker would be happier if I simply paid them in Fiat.

Would you rather hire a bitcoiners then? Is not because you can pay them in sats, but they will also bring value and more alignments with your and your business values. Moreover, you could have a private contract and avoid certain admin work and expenses...
I heard there are great communities popping up in Peru, especially in Lima. Are you in touch?

Going back to my question: if you had bitcoiners available, would you hire and pay them with sats? P2P no intermediaries?
