Really interesting, here are my two questions about this:
1:
Aren´t we more related to primates than to lions?
Primates eat what they find, they eat meat and fruit and plants and so on.
2:
I would be really interested in the medical implications of such a diet.
Nutrition and vitamin levels and hormon levels and so on.
If this is what benefits you the most, you should definitely continue!
Copying is a big part of learning to draw and basic techniques.
And it really is not easy, kudos to your talented daughter!
I think AI art is neither bad nor good, it is just a new technology that can be used in different ways and circumstances.
On one side it has produced a lot of garbage from lazy people.
On the other side it enables creative people to implement their visions even with little funds. (indie games for example)

This is an image that i created using AI locally on my PC one year ago. (with A1111)
It took me hours to figure out the correct parameters, models, Loras and little tweaks that would lead to this result.
Even if I would never take credit as an "artist" for this, I really appreciate the little imperfections and I am proud to have learned the process and technical details that this technology represents.

I bought my PS4 Pro in 2016 for around 320€ with two games included.
I still use it for gaming and don´t feel the need to buy a PS5.
I think it was a real bargain compared to current console prices.

In my younger years, I did non-profit youth work at a youth club in my town. It was operated by the church, but finances were handled like a business.
There was one full-time employee, and everything was payed with charity or membership fees (not mandatory for poor families).
In the end, they tried to charge as minimal money as possible and had to close.
This was a huge downfall for many kids that came from a toxic household and families.
So maybe, sometimes non-profit organizations should behave more like profit-organizations to keep everything alive for the people that need it.
From reading your story, I would suggest looking for people that are not in their phone bubble. There may be only a few of them, but they will likely resonate with your personality. You can talk with them about how all the other phone-people are missing out on the real purpose of life - making new friends and experience something new with an open mind and no distractions. I hope you will have a nice trip and meet many nice people!
