Every zap on SN works like lnproxy.

And that's super cool. At first I was worried about the privacy of the zaps. As in not having everyone know your LN pub key.

Privacy is one of the reasons we were dead set on doing the proxy thing. Blinded paths, when widely adopted, will prevent the need for proxying though.

And what will happen to SN fees then? Is there something like a double (both or nothing) BOLT12 payment?

We'd probably validate that Bolt12's include us as an introductory node on the blinded path. Then we'd take the sybil fee as a normal lightning routing fee.
