I used the leftover carcass and roasted vegetables from a whole chicken roasted for supper, and added a bunch of water, non-iodized salt and cracked black pepper. Simmered for 3 hours and then strained.
It tastes great. It's a small thing, but I kinda felt like I was overthrowing the government as I sipped on the first cup of warm delicious broth.
I do this with the duck or turkey from Christmas for use in making my gumbo.

I'm going to start doing this every chance I get. So easy, so good. Apparently healthy.
