Luckily I did most of my day's work before it went down, but I am still in a major panic. I rely on proton mail like I did gmail 6 years ago.

You should try Tutanota mail too—most Proton Mail users use it as well.

I tried to sign up for their service. Do you know if they accept Bitcoin or if I can purchase their subscription via sats using gift cards? For a privacy-focused email service, it is sad they are asking for credit card or PayPal details.
