When I became obsessed with bitcoin about five years ago I was hungry to learn. I would search for information everywhere. Surfing youtube videos was like wading through a field of manure looking for a few green shoots. I would be embarrassed by my feed: all the ridiculous, garish, clickbaity headlines, the screaming FUD or FOMO talk, etc.
Things have changed. You can still find those videos, but mostly you get Saylor or mainstream financial media clips featuring BlackRock or Van Eck, or an old retired finance guy like Kreuger. The tone is more serious, the graphics more staid.
I don't like them either. I'm not sure which is worse. I know I can just stop looking for videos, but sometines I just get bored.

I've left watching/finding anything Bitcoin related on YouTube a long time ago because it takes a lot of scrolling down to find something valuable.

I know what you mean. There are so many trash videos that just seem to amalgamate clips of different bitcoiners, the title telling you the price is gonna hit some ridiculously high number imminently.

And not talking about the flashy bullshit thumbnails and titles that are not far from any crappy shitcoin channel. Just an example from a well known channel that is supposed to educate noobs about Bitcoin...

People who make these 'price predictions' are almost overwhelmingly people who don't:
Self-custody Run a node Coinjoin or Use Lightning.
I personally believe that Bitcoin is undervalued by the market... but I am not an idiot it is impossible to 'predict' exactly what that looks like.
And these videos and 'open faces' simply make Bitcoin look like a scam instead of the great money/asset/property that it is. It's looking past the stupidity that's important.

LOL no way, I never login, not even with a throwaway account. Also my browser is blocking any intent of fingerprinting my history and each session open is a clean one. I will not give them not a single inch to data mine my activity. I also try to watch through invidious platform most of the YT videos if is possible (not all are allowed).

Is already forcing but not 100% required. If you use a VPN and is displaying that alert that you should login, just refresh and will pass on. If they will enforce login to watch videos, that will be their end.

One of my favourite aspects of Nostr. Darth is right, youtube is trash. The ads have gotten much worse too. Implacable. Rumble is a little better (generally speaking, I don't watch bitcoin content there), and I've noticed some improvements in their mobile app over the last year.

Agreed, we need more alternative platforms that also use Bitcoin. Rumble, Bitchute, Odysey, Vimeo, Dtube etc are still alternatives to YT but without BTC are going to die.
Another intent to concentrate Bitcoin content was https://bitcointv.com/, but seems to not have so much new content anymore.

Last I checked a few weeks ago most of the invidious instances were blocked. do you have any working ones?

yeah sometimes are working sometimes don't. I think depends also of how the OP set the region, content etc. What I do is copying the video ID into https://yewtu.be/.
I've tried the Redirector browser extension with youtube videos to be redirected to invidious but is not working 100%

You will not find good Bitcoin education on Youtube. And was always like that. 90% is only garbage same "news" repeated one from another. Very few good tutorials only dedicated channels and surprisingly those do not have so many views.
The real Bitcoin education is in documentation pages (see also the docs page of each bitcoin app). And here are just few of them:
Youtube is just a distraction and cash grabbing platform.

It's filled with lot of shitcoin crap now :( most of the videos basically are to make people rich nothing else. I never recommend anyone to learn about BTC from YT videos it can divert the true goal of BTC. And I tell you it's not just for Bitcoins but for nearly everything! Stupid crap advertisement, brainwashing people's mind, lot of wokeism content, promoting only big accounts.
But I am still subscribed to some awesome guys and organization channels that share a lot of great content.

Its amazing how the landscape has really changed. I remember so many videos about all the other shitcoins, too. Many have disappeared. Seems like a lot of influencers are trying to push bitcoin now, too.

Nope, no the videos have not disappeared. It's all a distraction and the people buying shipcoins will get reckt.
Look at the 'top coins' from 5-6 years ago. The majority are illiquid and essentially worthless.

Search whatever you want on YouTube. It is full. Discuss the topic with information from both sides, positive and negative.
