INGREDIENTS
- 1 cup cornstarch
- 1 cup coconut milk
- 1 cup evaporated milk
- 1 cup condensed milk
- 1 cup sugar
- 1 cup sweet corn kernels (canned or frozen)
- 1/2 cup grated coconut (optional, for garnish)
- 1/4 cup water
- 1 teaspoon vanilla extract
- Butter or cooking oil (for greasing the mold)
INSTRUCTIONS
- STEP 1 - Grease a mold or a square baking dish with butter or cooking oil. This will prevent the maja blanca from sticking.
- STEP 2 - In a bowl, dissolve the cornstarch in water. Make sure there are no lumps.
- STEP 3 - In a saucepan, combine the coconut milk, evaporated milk, condensed milk, and sugar. Stir the mixture over medium heat until the sugar is completely dissolved.
- STEP 4 - Add the dissolved cornstarch to the milk mixture while continuously stirring. Keep stirring to avoid lumps.
- STEP 5 - Cook the mixture over medium heat, stirring constantly, until it thickens. This may take about 10-15 minutes.
- STEP 6 - Add the sweet corn kernels to the mixture and continue stirring.
- STEP 7 - Once the mixture has thickened and the corn is evenly distributed, add the vanilla extract and mix well.
- STEP 8 - Pour the mixture into the greased mold or baking dish. Smooth the top with a spatula.
- STEP 9 - Allow the maja blanca to cool to room temperature before placing it in the refrigerator to set. This may take a few hours.
- STEP 10** - Once the maja blanca has set, you can optionally garnish it with grated coconut before serving.
- STEP 11 - Cut the maja blanca into squares or diamonds and serve chilled.
