I could only really think of Live Overflow regarding ~security because he is so good. No one else I can think of comes close. But maybe I don't know enough other ~security YTers. But I feel like I don't need any other. He also works at Cure53 as a pentester which is his real job (YT is just a side project for him).

Not YouTube, but Firewalls Don't Stop Dragons is a good podcast. I like that he reads excerpts and gives information that would be useful to your average user as opposed to trying to be perfectly private

Not only ads but the suggested videos as well. It's not about Google earning money, it is about controlling your attention.
But yeah, some 3rd party front ends don't show you the suggested videos.
Also, my comment was for everyone, not just OP. Others might not be as privacy savvy as OP.

Whoever they are, use a private frontend such as yewtu.be to access YT content.
You’ll also avoid trackers and ads.
